Description
Although apparently finos and manzanilla occupy the base of the complex pyramid of Marco de Jerez wines, we are dealing with great wines with a unique production system in the world. A registered trademark since 1908, Manzanilla La Guita is already a classic in Sanlúcar de Barrameda. Famous for its excellent value for money, it is made with fine palomino grapes from Sanlúcar vineyards, mainly from Pago de Miraflores, one of the most prestigious in this area.
Once the fermentation of the young wine is complete, a veil on the surface of the wine inside the boot: it is a layer of yeasts known as flor that protects the wine from contact with oxygen. These yeasts interact with the wine and provide it with very unique aromas and flavors. This type of aging is called aging under the flower veil or biological aging, and is carried out according to the traditional system of criaderas and soleras.
