The sugar canes that make it up grow in the richest lands from Martinique, which also bear the 'Appellation d'Origine Contrôlée Martinique' mention since 1996.
The Depaz distillery was born in the heart of La Montagne, located in Saint-Pierre not far from the Pelee mountain, founded in 1651, under the will of Jacques Duparquet, the first governor of the island. The Depaz distillery pays tribute to Víctor Depaz. His family worked in the production of rum, essential local actors until in 1902, when they all died under the awakening of Pelée Mountain, with the exception of Víctor, then a student in Bordeaux and since then an orphan. He will return 15 years after the eruption to revive the field from its ashes, rebuilding the Habitation Perinelle of his childhood in the same way. It won't be long before the quality of the rums produced by the Depaz distillery radiates around the world, fed by sugar cane from a rich volcanic soil and water of exceptional purity. Steeped in tradition, the distillery is one of the smallest in Martinique, whose heart still runs on an old steam engine.
