The San Luis Potosí Blue Class Mezcal is made with green agave (Agave salmiana), a variety of agave native to the semi-desert slopes and plains of San Luis Potosí.

In its natural environment, the plant is considered mature at around 12 years old , when it reaches a height of almost five feet. Its growth and maturation depend on factors such as temperature, soil composition and water availability.

The unique profile of this mezcal is due to a meticulous process of steam cooking, traditional grinding and extraction methods, and distillation in traditional copper stills.

Cooked agave, caramel, green chilli, sweet fruit and freshly cut grass with subtle aromas of wild flowers.

Palate

Herbal entry with hints of caramel, lime zest and clove, with a mineral and spicy aftertaste.

Food pairing

Fruit: red plum, lychee or green olive.

Cheese: cured goat's cheese, fresh goat's cheese or ricotta (whey cheese).

Chocolate: white chocolate or ruby chocolate.

Additional Information

The decanter made for this edition is inspired by the history of the Huachichil people, a nomadic tribe that roamed the desert of San Luis Potosí in central Mexico. The red colour of the pottery alludes to the name of the Huachichil people, which means 'heads painted red'.

The carvings on the base of the jar are symbols of their stories: the vast desert and mountains that make up their territory, the green agave leaves typical of the region, and the red finch, of great significance to the Huachichil people.

Handcrafted by Mexican artisans using a technique that uses coloured threads to create, the decanter's lid depicts a beautiful dreamscape of mountains and desert valleys filled with red finches in flight.

Each stopper takes the artisan more than three hours to make.
