Knappogue Castle Irish Whiskey is named after a beautiful castle of the fifteenth century built in 1497 by Sean MacNamara. In 1920, the castle was bought and restored by Mark Edwin Andrews. In the 1960s, Andrews began to buy pure whiskey barrels from distilleries Ireland. He aged and bottled under the label of Knappogue Castle. His last batch of Knappogue 1951 is revered by connoisseurs as the most ancient and rare Irish whiskey. Malted barley is dried in kilns without the use of peat, allowing the fresh, clean taste of malted barley without shades of smoke. Dry malt is ground and mixed with pure water to extract Irish spring sugars. Whiskeys single malt Knappogue Castle distilled three times in copper stills shaped traditional onions. Then the liquor is placed in oak barrels before it was used for bourbon, it was stored at a relatively constant temperature and older. After more than 15 years in barrels of bourbon, whiskey for Twin Wood was selected by the master distiller for nine months of further aging in barrels infused especially for Knappogue Castle using Oloroso Sherry, hence the name Twin Wood. The delicate distillation process, along with the wet Irish weather and mild, and the special aging in sherry casks, has produced the distinctive flavor of the Forest Twin Knappogue. This is the first Knappogue Castle Whiskey aged in two types of wood. It goes back to its ancestor, the legendary Knappogue Castle 1951, which was distilled in 1951 and aged 36 years alone in sherry casks before being bottled in 1987. Using two types of wooden barrels in Twin Wood produced a whiskey has a deep, complex and very mild flavor. Knappogue Castle Twin Wood filtered only slightly, unlike many whiskeys, no dye is added.
