Cave of the Monge is a red wine 100% Tempranillo which starts its development with the harvest, which is performed manually, the grapes once reached the winery, is destemmed and squeezes without pressure and then make the fermentation for 12 days at a temperature of 28ºC. Finally, aging in American oak barrels and French lasts about 14 months.
A wine of intense red color that stands out as having a very complex flavor profile, elegant and fine where they are perceived aromas of roasted coffee and chocolate, taste is round and fleshy with a good balance of its fresh acidity.
