Pata Negra 100% Iberico Bellota Ham is the result of selecting the best pieces that form a limited series and numbered according to the vintage. Hind limb from own 100% Iberian pigs selected from birth. They spend the first stage of their life on our farm, feeding on natural cereals made in our facilities until they reach a weight of between 40 and 50kg, when they enter the pastures. In them they enjoy an exquisite diet made up of this selection of cereals as well as grasses, tubers, roots and acorns, reaching 90/100kg at the beginning of October (when the montanera begins), when the acorns fall and the that feed exclusively until they reach an approximate weight of 180kg in their adult stage.
These pieces, due to the 100% Iberian breed that characterizes them and their exquisite diet, have an elongated and stylized cane with a fat golden and fluid on the outside, while on the inside it shows a pink and melting appearance that floods the mouth with intense and prolonged nuances.
