Description
After a slight maceration of the skins with the must in the press, it is fermented in wooden vats of different volumes and new French oak barrels from the Nevers district with a very light toasting. Once the alcoholic fermentation is finished, it remains in the barrels for 4 months, making 2 battonagges per week during the first months and once a day in the last month, to keep its fine lees in contact with the wine, protecting it from oxygen and providing softness on the palate and complexity.
This wine has a nice straw yellow color. The nose is intense and complex with floral aromas (white flowers, jasmine), stone fruit (peach), citrus (grapefruit, lemon), pear, apple and banana. Very fine and elegant.
