Description
Monastrell is located at the foot of the Dolomites, where the Valencian winery Casa Los Frailes produces this red wine that takes its name from its place of origin: The Dolomites. We are talking about the shallowest soil on the farm, where the roots measure only 60 cm until they touch the bedrock.
This fact gives the wine a special uniqueness that is highly respected in the winery. Interference with the basement is kept to a minimum.
Fermentation with native yeasts, gentle pump-overs, minimal sulfur and gentle final filtration. Malolactic fermentation and maturation take place in old vats from the 17th century where the monks made their wines.
