Description
The bunches are grown on the Balbaína and Carrascal estates, which are owned by the winery.
For its production, the yolk juice is fermented at 28º Celsius. They are reinforced or fortified by adding wine alcohol until they reach 19.5º.
Then, the palomino and Pedro Ximénez are mixed on tables.
Later, they reach the criaderas and soleras system, where they are subjected to chemical aging by oxidation, where they remain for a minimum average period of six years.
The Dry Sack Medium It has a bright amber color. Its aroma is very intense, pleasant and persistent.
In the mouth it is harmonious and full, with a slightly sweet finish that makes it very special. It can be taken neat or with ice.
