The vintage project is based on selecting musts that come from old vines of the Pagos de Añina and Carrascal, which is fortified at 15º or 18º and left untouched to study where they evolve, developing spontaneously biological aging or oxidative aging, unlike traditional sherry wines, the aging system is not "Solera y Criaderas", it is an exception since it is a static aging wine, that is to say that in the vintage of the corresponding year, the yolk must was selected, which became alcoholic and over time spontaneously due to the presence of flor yeasts in the environment, the flor veil developed naturally and in the case of not developing the flor began oxidative aging.
