Old Tawny Ports should be tasted regularly over the many years that they remain in the cellars. The wines need to be racked from time to time during each year. Racking is the process by which Dow's team of experienced lodge men carefully extract the wine from its 'lees' (the natural sediment that forms at the bottom of the barrel) and then pour it back into the clean barrel .
