Waterford Organic Gaia 1.1 is Ireland's first whiskey distilled from certified organic Irish barley. Hence the name Gaia, the neo-pagan goddess of yesteryear, a personification of Mother Earth herself, honoring our creation. For this whisky, the Ouverture variety was used with Mauri distiller's yeast during a fermentation period of 136 hours. The whiskey is matured in barrels for a total of 3 years 9 months and 20 days.
