Maceration with the skins in small tanks at a controlled temperature for 4 days, prior to gentle pressing and fermentation at 16ºC for three weeks.
Once the wine has been assembled, there is an expert and delicate work with the lees to give the wine amplitude and presence in the mouth. A very noble variety that reaches its maximum expression after 3 months of aging in the bottle prior to its release on the market.
The clean flavors of the Albariño are extremely versatile to accompany typical dishes of the area such as octopus Galician or scallops. It is ideal with white meats and vegetables or seafood, clams, oysters, baked fish.
