Description
For the production of Peinado brandy, wine spirits with an alcohol content of less than 70ºC, called holandas, are used as raw material. Holandas are obtained by distillation of wines from healthy grapes of the Airén variety. This distillation is carried out in copper stills over low heat. The copper stills act as catalysts for chemical reactions, which give the holandas their characteristic bouquet. Subsequently, these alcohols are aged by depositing them in American oak barrels, previously cured and with a capacity of between 200 and 500 litres.
