Pablo Calatayud, current owner and winemaker, has been using ancient production methods for some time, as well as using local grape varieties such as Mandó, with a single objective, to return to that historical essence of Valencian wines. Setze Gallets It is a red wine with the designation of origin Valencia that is made from Garnacha tintorera, Cabernet Sauvignon, Merlot and Monastrell. The grapes are harvested manually and transferred to the winery where the total destemming is carried out. Once the grapes are obtained, they are macerated by the traditional method in stainless steel tanks for approximately 12 days, to later extract the must thanks to the pneumatic press. . Finally, malolactic fermentation is carried out in tanks next to its fine lees. A bright cherry-colored wine that has a balsamic aroma with hints of red, ripe, spicy and toasted fruit, on the palate it presents a good acidity with a certain balsamic touch, long drink with a fine bitterness.
