Highland Park is one of the few distilleries that today are manually malteando their own barley, plus they also have a peat for drying the malted grain made of briar decaying, an important ingredient in the development of whiskeys Highland Park because it gives them the characteristic taste.

A whiskey which is predominantly a mixture of sherry and peat with other sweeter and citrus aromas on the palate has a soft texture that combines the dryness of smoke from the peat with the typical fruity sweetness of Speyside whiskeys.
