Description
The winery Pago de Carraoveja is responsible for making red wine Pago de Carraovejas whose designation of origin Reserve is the Ribera de Duero.
This wine is made from a mixture of three grapes, the main grape is Tinto Fino with a small percentage of Cabernet Sauvignon and Merlot. His harvest is done manually where you select, once in the winery a second selection is made. These grapes pass overnight in a cold store before entering deposits by gravity, which helps to get a slow and controlled fermentation. A fermentation takes place in stainless steel tanks and French oak vats with indigenous yeasts from the vineyard itself, a completed time passes by gravity French oak barrels superfine grain, which also makes its aging for 12 months. Finally, before bottling, it clarified with natural egg white remaining for 36 months in bottle.
A cherry-red wine with a complex aroma of red fruits and black sweet with spicy notes and mineral palate is elegant and intense with good acidity and long finish.
