Barbadillo Castillo de San Diego is a white wine from Jerez Designation of Origin (IGP Cádiz) which is made from a single grape variety, the fine Palomino. Wine is made from the yolk wine, a juice that comes from grapes that flows by gravity without pressing the fruit. The fermentation is performed in stainless steel at a controlled temperature for 10 days with yeasts selected by the winery.
A pale yellow wine with very clean and bright greenish reflections, frank nose clean scent which include pleasant aromas of white flowers and tender fruit is perceived. The palate is dry, light very easy to drink with good acidity and a pleasant finish.
